Interested? Please pick from my classes below. The cost of the classes are $125 per person and are taught at my kitchen. This includes up to four hours of hands on professional instruction and a recipe packet to take home. Please bring your favorite knives and apron. Hurry! Attendance is limited!

We have all tried to make great tasting pizza with mixed results. In this class, I will teach you the Culinary Secrets™ of how to make pizza just like in Italy in your own home. You will learn everything from how to make the proper style dough, proper freezing and thawing procedures, how to pick quality ingredients, and how to make several styles of pizza. We will end the class with you making your own style of pizza.

For this class I bring my experience working and training on the Italian country side. I will teach you the basic techniques of making pasta and shapes and then three fundamental Italian cooking sauces that you will be able to learn and make with ease on your own.

If you have already experienced Fresh pasta and sauces, then step up the challenge with gnocchi and ravioli. I will cover more advanced pasta making such as potato gnocchi with pomodoro sauce and fresh mozzarella and then onto the class favorite, raviolis. You will learn the basics of making raviolis along with different fillings. Including my favorite recipe for wild mushroom pansotti with roasted cauliflower and a truffle cream sauce. ( Seasonal )

I will teach you all of the Culinary Secrets™ of making Thai cuisine just as I learned while traveling through Thailand. You will learn the secret to a great tasting papaya salad, how to perfect the texture on your sticky rice, the traditional pad thai, a creamy and tasty coconut milk soup, and chicken satay that will make your guests coming back for more. I will go through all of the ingredients and explain them and their uses.

We will begin with a quick review on how to make pizza dough them will proceed to make some world famous pizzas. We will start off with the 12 pound stuffed meat pizza that is typical in New England and end in using various ingredients to create your own world famous pizza.

In this class we will meet at the Tracy Farmers market and search out the freshest and best produce then head back to the kitchen to learn how to work with the newly purchased items and learn how to turn them into culinary treats!
